Sneak a Squeak

Squeaker cheese is the perfect name for fresh, mild cheddar, commonly known as cheese curds. This tasty cheese treat 'squeaks' when you chew it. Squeaker cheese has a slightly salty flavour and is best eaten un-refrigerated.

How it’s Made

The milk is pasteurized, and bacterial culture and rennet are added. The curd separates from the whey and the curd is cut and cooked.

It’s then extracted and pressed using a cheddarization table, where the whey starts to drain away from the curd.

The cheddarization process is next and the curd slices are layered, and turned and folded regularly.

The slices are then cut into smaller pieces, turning them into cheese curds. 

Finally the curds are salted, and then are ready to be packaged.

Fresh Organic Milk

Pure, organic, whole cow’s milk produced by Montana dairies with high butterfat content.

BSC only uses milk from cows not treated with antibiotics, growth hormones or rBST.

The dairy cows are fed cereal grains and forages such as barley, corn and alfalfa without the use of Genetically Modified Organisms (“GMO”).

No Antibiotics

No antibiotic treatments are permitted for dairy cows producing milk.
